So in case I ever forget this self-dreamed-up recipe, or if any of my friends would like to recreate it, here’s the recipe for my salad this afternoon!
T&C Salad
1 large bowl or 1 large bag of mixed greens, such as Romaine, Rocket & Arugula
12 pcs of sun-dried tomatoes
½ cup spiced feta cheese (or regular feta)
½ cup balsamic vinegar
½ cup extra virgin olive oil
½ key lime (or 2 regular lime)
3 ½ teaspoon of himalayan pink salt (or sea salt)
First soak the tomatoes in the olive oil overnight.
During prep, take out and cut the tomatoes into smaller pieces before placing it in with the greens.
We now used the flavoured olive oil to make the dressing. Top it up with the balsamic vinegar, half a teaspoon of the salt and lime juice, then shake vigorously.
Sprinkle 2 teaspoons of the salt into the salad, pour in most of the dressing (leaving about 1/5 cup) and toss! Before serving, just add the feta on top, sprinkle the remaining salt and add in the remaining dressing. Easy! Serves 6.
Food aside, the gathering was much needed. A flurry of present exchanges and bit-sized chunks of updates. It was amazing just to be able to comfortably share, laugh, tease and cheer with abandon. As usual, we always say that we must do this more often but let’s hope it comes about!
